The Specific Carbohydrate Diet


About a month ago I stumbled upon the Roost blog after pinning the most beautiful harvest cake. I became a bit obsessed as I read post after post, devouring every word and reevaluating my own less-than-stellar eating habits. When I got to this post in particular I was blown away by how she was so determined to help her husband that she educated herself and took a huge leap of faith by diving into a completely different lifestyle. She was taking care of her husband and through their diet, she fixed him! Amazing! I then realized that I needed to do everything I could to get us healthy.

Brandon and I suffer a bit from different ailments and after reading into the specific carbohydrate diet, I knew we had to try it. It seemed to be the cure-all that we desperately needed.


So I bought a couple of books, brushed up on my biology and most importantly, set a date. I gave myself one month to research and prepare to give up most of the foods we eat on a daily basis. It felt almost like I was planning for a big trip. I planned recipes as if I was arranging an amazing itinerary and looked forward to the big day with nothing but wide-eyed anticipation. Guess what? It made all the difference. I am loving the challenges of the diet that are forcing me out of my comfort zone. I am determined to eat well and be healthy and although it seems a bit foolish to start a diet before the holidays, it was time for an immediate change and I could not be happier about it. I already feel better and the three pounds that I have lost already are just an added bonus.


So in my first attempt at making some sweets to curb any wavering from the cause, I thought these would be perfect. I used orange extract instead of orange blossom water because with two hungry kids at the grocery store I didn't have tons of time to scan the isles. I also don't have the most powerful blender so I let the cashews soak for four hours instead of three and the cream came out so smooth and full of flavor. We ate one last night for dessert and another this morning for breakfast and I have to say that it was way better than my usual Eggo.

This diet isn't for everyone, and it certainly won't last forever, but we are giving ourselves a solid 3 months. Wish us luck, but so far I have all the faith in the world that if we stick together we will stay strong and see it through.
